Local Food of Madhya Pradesh
Corn also known as ‘makai’ or ‘bhutta’ is one of the staple crops of Madhya Pradesh and is often used in the traditional cuisine. Makai ki khees is a savoury snack and is also a popular street food of Indore. It is usually made by grating the corn off the cob and then roasting it in ghee and spices. Some versions also include milk. When added with milk, it’s a popular breakfast dish.
How to Make Makai ki Khees / Grated Corn Snack Recipe.
Serves: 2 people
Preparation time: 10 minutes
Cooking Time: 20-25 minutes
Ingredients:
- Grated corn: 1½ cup
- Mustard seeds: ¼ tsp
- Curry leaves: 4-8
- Red chilly (dry): 2-4
- Coconut grated: ½ cup
- Milk: ½ cup
- Sugar: ½ tsp
- Dash of hing (Asafoetida)
- Pinch of turmeric
- Onions, chopped finely: ½ cup
- Tomatoes, chopped finely: ½ cup
- Lemon juice: as per taste
- Salt to taste
Method:
- Heat oil in a pan and add mustard seeds, red chillies and curry leaves.
- Sauté for a few seconds.
- Add chopped onions and fry till it turns to golden.
- Add tomatoes.
- Add turmeric, salt and mix properly.
- Add grated corn, mix once again and cook for few minutes.
- Add milk, sugar, grated coconut and mix properly.
- Cover and cook on a low flame for 10 minutes.
- Add lime juice and garnish with green coriander.
